     Most toursits visiting Hoian are impressed by the food typical of the old town. The water of the region and the unique flavors it imparts influances the local gastronomy. The culinary skills of local Hoian chefs and the inhabitants have raised eating and drinking to an art form. Beside the traditional of Vietnam, there are also many dishes served that are a combination of Chinese and other countries influances. Because of its cultural diversity, cuisine can vary greatly from street to street and the way in which these foods are prepared are zealously guarded family secrets.

 
CAO LAU
 
     Cao Lau is a noodle dish. The noodles are made with rice flour soaked in ash water and then cooked three times. The Cao Lau noodle is usually topped with roast meat slices, vegetables, bean sprouts, and spices.Only the water from wells in Hoian can be used to make authentic Cao Lau noodles.Visitors to Hoian who want to eat truly
authentic cao lau should seek out the only cao lau street vendor on Nguyen Hue street. She is an old waman who,s been selling cao lau on this street more than 20 years. Her location is always crowded from 3:00pm to 4:30pm. If you on’t arrive between those hours, you’ll have to wait until the next day. There are also some restaurants that serve good, if not truly authentic, cao lau for foreigners. The price is about 7000 VND/pax.

 
BANH BAO, BANH VAC
 
Many people like these cakes not only for their delicious flavor but also for their beautiful appearance. The French gave it the name of "white roses". The care is made from white rice flour and stuffed with cooked shrimp meat. The translucence of the flour along with the color of the shrimp meat gives it the apprearance of a white rose petal. There is only one family in Hoian able to make this cake. Vac cake is typically sold to restaurants.

 
MY QUANG
 
This is the popular country dish in Hoian and Quang Nam. The noodle is yellow or white in color and made from rice flour. It is mixed with shrimp, pork and vegetables, and topped with grilled rice paper and spices.
